Bacon and Cheese Crustless Quiche
I'll be honest, I made this quiche crustless because I didn't want the bother of making a pie crust and blind baking it before adding the egg mixture. We absolutely love this recipe just how it is. It serves up easily, you can have no worries for your gluten-free guests, and it's a quick to prep recipe. If you decide that you want to add a crust, I'm sure it will add a flakey and buttery depth to your quiche.
Ingredients for Bacon and Cheese Quiche
8 eggs
1 cup half and half (can substitue milk but won't be as rich in flavor)
salt and pepper to taste (remember bacon will add additional saltiness)
1 cup grated cheese (mixture of sharp cheddar, white cheddar, swiss cheese, provolone, or parmesan)
1/3 cup green onions - sliced in rings
4-5 pieces of cooked bacon - crumbled

Note: You can add additional ingredients depending on the taste that your family likes best. Saute mushrooms or bell pepper would be tasty as well.
Instructions to Make Cheese, Bacon, and Green Onion Quiche
1. Preheat oven to 350 degrees.
2. Whisk together eggs, milk, and seasonings.
3. Stir in all onions, and 3/4 of the cheese and bacon. The remainder will be added later.

5. Bake for 35 minutes, then sprinkle the remaining bacon and cheese onto the top. Bake for an additional 10 minutes.
6. Slice and serve!
