Today I have a guest post for you from a wonderful blogger I met through the Bloggers Brags party we co-host on Monday's.
I want to thank Ali for inviting me to share my Waldorf-Inspired Chicken Salad with you on Home Crafts by Ali. I had fun creating this recipe, which is a refreshing take on a traditional Waldorf salad.
Waldorf-Inspired Chicken Salad
This salad is simple and perfect for a summer get-together. It isn't necessary to cook chicken specifically for this dish: leftover grilled or baked chicken would do just fine! I've suggested a preparation for the chicken, but any herb-based seasoning would pair well. For the dressing:
1/3 cup of sour cream
3 tbsp of mayonnaise
2 tsp of apple cider vinegar
zest of 1/2 a lemon
3 tsp of chopped fresh dill
1 minced (medium/large) garlic glove
For the salad:
1 cup of slices red grapes
1/2 cup of sliced cucumber
1 chopped granny smith apple
2 chicken legs or breasts, skins removed
For the chicken seasoning:
A pinch of grated nutmeg
1 1/2 tsp dried or fresh thyme
Olive oil
Salt
Pepper
- Combine all the ingredients for the dressing and refrigerate for at least half an hour.
- Season chicken with nutmeg, thyme, olive oil, salt and pepper. Bake at 375° until juices run clear.
- Let the chicken cool completely before chopping it into medium-small chunks.
- Slice the grapes and cucumber, and chop the apples.
- Combine chicken, grapes, cucumber, and apple. Mix with dressing. Season to taste with salt and pepper.
- Serve on toasted baguette and garnish with a sprig (or two!) of dill.
Thanks again to Ali for having me on Home Crafts by Ali. I hope you'll take a moment to stop by Flourish and Knot. You'll find plenty of DIY inspiration and delicious recipes. Happy cooking!
We love Waldorf salad (my husband without the walnuts; me with), but we have never tried adding chicken and making it a sandwich. Great idea! Look forward to trying it soon!
ReplyDeleteI hope you enjoy Sarah's recipe! I like her addition of dill too.
DeleteThat looks delicious!
ReplyDeleteI know Jill!
DeleteSounds really yummy!
ReplyDeleteI think so too! The seasoning on her chicken probably adds just the right flavor.
DeleteThis is one of my favorite treats. When we moved into our house, a friend brought over a whole tray of them and they were so delicious.
ReplyDeleteEven though the party is ending, it makes me happy to see you two bloggers becoming good friends through it. Thanks for being great co-hosts!
ReplyDeleteThanks for visiting Tammy! I will miss the link party, it was fun co-hosting.
