Sauteed Lemon Pepper Asparagus


My husband originally created this recipe for sauteed asparagus.  A few years ago I was working full time and I came home for dinner on Valentines Day and he had made a wonderful dinner, including this tasty sauteed asparagus.  I decided to make this for dinner a few weeks ago and it turned out very nice.


Wash and trim your asparagus spears.  The bottom 1-inch of your asparagus us hard, woody, and not good to eat.  Snap off the bottom end to leave you with the fresh and flavorful vegetable.


Heat a pan over medium heat and add 1 T butter.  Melt butter and add asparagus.  At this point I place a lid on my pan so the steam is kept in.  The asparagus will get the nice flavor of sauteing in the pan, but will also have the benefit of being steamed at the same time.


Next gather your spices.  For this recipe I use sea salt and lemon pepper for seasoning.  I have tried many different combinations and this one is our favorite.


After about 4 minutes of cooking in the butter, season your asparagus and use a wooden spoon to move your asparagus so all pieces have the spices on them.


Replace the lid, turn the heat down to medium-low, and cook for an additional 5-6 minutes.  During the cooking process, pick up the pan, hold the lid down tightly, and shake the pan to move the asparagus.  That will ensure that it does not cook only on one side and burn.  I do this every 2 minutes during cooking.  Check to make sure your asparagus is tender and done.

Serve asparagus and enjoy!


Tip:  If you are wanting to make this a little healthier, instead of cooking in butter you can use a small amount of sodium free chicken broth.  It won't give the same flavor as butter, but it will still taste good.
