My Favorite Guacamole

Guacamole is pretty popular at our house.  We like to snack on guacamole with chips, top our Tuesday Tacos with it, and put a generous layer of it in my 7-Layer Dip.

When we go to a new Mexican restaurant, I know I will like the place if the guacamole is tasty.  I've never met a store bought guacamole that I've liked, so I make my own.  Here's the recipe for my favorite guacamole.

Ingredients:
1 - 2 ripe avocados
1 tomato
regular or green onion
lime juice (fresh is best)
sour cream
salt & pepper
knife
fork
optional - salsa


Slice your avocado in half lengthwise.  You can use a regular butter knife to do that. I use my Pampered Chef avocado knife, which is great for kiwi too!


After you have sliced the avocado, gently twist the halves in opposite directions to separate.  Scoop out the inside and place in your bowl.  I mash the avocado up, leaving it a little chunky for a nice texture.

Next chop your tomato - discard the seeds so it doesn't have too much liquid.

Chop your onion in small pieces (use this tip for no crying). If adding green onion, using kitchen shears makes it so much faster.

 Add the onion and tomatoes to the bowl. Mix slightly.


Add a few squirts of lime juice. Fresh is best, but you can use bottled lime juice if you don't have a fresh one. Lemon can also be used.

I like to add one teaspoon of sour cream to my guacamole to make it just a bit creamy.  Mix until well blended.


I usually stop here and taste test it to make sure there is enough lime and seasonings.  If it is bland, sometimes I add a spoonful of salsa to it.  It just depends on what my tastebuds are saying that day.

Usually at this point we just start eating out of our bowl or I add it to our 7 layer dip.  But for you guys I got our salsa bowl out so it looks a little nicer. My family was excited and pretended we were eating at a Mexican restaurant.

Grab some chips or veggies, top your favorite tacos or burritos, add it to your layer dip, or maybe just eat a bit with a spoon.  Sharing is optional.

    1. My youngest daughter doesn't like it either. When we are munching on guacamole, she gets hummus and pita chips. =)
