In my home, I love fast and easy recipes. Mornings and after school are always so rushed, so having a simple recipe that I can turn to is a must. Every few months I join with a group of bloggers in a recipe challenge. Each time there is a different ingredient used, but this month the topic is Breakfast. I had a hard time deciding which recipe to make this month - would it be simply delicious yogurt parfaits, or freezable egg muffins stuffed with tasty add-ins, or maybe even my favorite a frittata full of veggies. These mini cinnamon rolls kept coming to mind though, so I decided to make them. Let's just say I'm lucky there are any pictures to go along with this recipe! As soon as I took them out of the oven my family happened to wander into the kitchen, drawn in by the wonderful smell of the warm cinnamon.
When having these for breakfast do the simple prep, put them in the oven, get dressed or make lunches and by the time you are done, these mini cinnamon rolls will be too! When fixing them after school for a special treat, make them up while the kids are unpacking their backpack and doing homework. They will be cooled off when homework time is done and you can sit down and chat about the day. Have tweens or teens that like to disappear to their rooms? These bite size cinnamon rolls will draw them in to spend time with family.
Easy Mini Cinnamon Rolls
Ingredients
Rolls
2 packages crescent dough sheets
5 T butter, softened
1/3 c packed light brown sugar
1 T sugar
2 t cinnamon
5 T butter, softened
1/3 c packed light brown sugar
1 T sugar
2 t cinnamon
Icing
2/3 c powdered sugar
1-2 T milk
1/2 t vanilla
Recipe Instructions
Heat oven to 375. Grease two 9-inch round cake pans or pie plates.
Place the butter, brown sugar, sugar and cinnamon in a small mixing bowl and stir to combine.
Unroll crescent dough sheet and spread half of the butter and cinnamon sugar mixture over the dough sheet. Spread it evenly so the wonderful flavor will be in every bite.
Starting at one of the short ends of the dough, gently roll the dough into a jelly roll shape. The dough is kind of thin and may tear in a few places. If that happens, pinch the dough back together.
Use a serrated knife to cut the rolled dough into small rolls. For each sheet that you use, you can get 15 or 16 rolls, depending on how thin you slice them.
Arrange rolls in pans so that they are barely touching. Your pans will look different if they are larger or smaller. My smaller pie plate was filled, but with my larger pie plate there was just an outer ring of rolls. Both taste wonderful!
Repeat steps with other dough sheet.
Cook for 10-12 minutes or until they are golden brown. Remove from oven and place on wire rack to cool for 10 minutes.
While the rolls are cooling, you can make the icing. Place the powdered sugar in a small bowl. Add vanilla and stir. Add enough milk to make a smooth glaze. I only ended up using 1 of the tablespoons of milk.
Drizzle icing over cooled rolls. They are then ready to serve and eat! Serve with fruit salad or a nice glass of milk.
These are a tasty treat to serve at a brunch, for breakfast with fruit and yogurt, as an after school snack, when you know the kids' friends are coming over, or even for a simple dessert.
These two-bite eats are a nice little treat. Make a pan, have a few, and share with a neighbor or friend. These warm and comforting tiny sweet rolls will be a welcome addition anytime.
I hope you love these mini cinnamon rolls as much as my family does! If you want some other ideas for breakfast, take a look below at the recipes my blogger friends made.
